On Food & a Sweet Tooth

We’re in the middle of a snow, sleet and ice event here at MHC.  Can I tell you how sick of winter I am? It hasn’t even been a month since the blizzard that came our way the day after Christmas and we’ve had 3  major snowfalls and now this. Last night, as we listened to the weather report, Don immediately worried about whether we had enough sweets in the house in the event we were ‘trapped’ here.

I looked around and announced that I had enough on hand to make oatmeal raisin cookies. I will be starting on those shortly…after I recover from yet more snow shoveling. We aren’t doing too well with our addiction to sweets, are we? It’s always harder in the winter months and this winter is a pain in the….

Since it is cold and gray and snowy, I treat myself to this everyday:

Wouldn’t you? But it can’t be any cocoa, it has to be this cocoa:

Double Chocolate or Hazelnut Chocolate. Ummm-mmmm good.

When we lived in San Diego, the local Whole Foods carried a cookie that I was addicted to. Chocolate Truffle Heart Cookies. They were more like a cookie sandwich and they were the best cookie I’ve ever had.  I would treat myself to one or two every week. (Of course, I was thinner then and sweets didn’t immediately go to my waist.) I longed to figure out how they were made. Never did. And after a while, whoever was making them stopped supplying them to Whole Foods. I went into mourning. Believe me when I tell you that I have googled and googled and have never found the right recipe for them.

I’ve also misplaced some of my Grandmother’s recipes. She was the baking queen. She made the most wonderful Butter Tarts and a little treasure called Current Cakes. Can’t find the recipes. Maybe they are buried in a box in the shed, but I don’t think so.  I get sad when I think I may have misplaced them forever. Meredith, do you have copies of them?

But I do have her recipe for Cloud Biscuits. I make these often, especially this time of year. They are really just a variation of Baking Powder Biscuits, though I personally think they are the best version.

Cloud Biscuits
2 cups flour
1 tsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 cup butter
1 egg, beaten
2/3 cup milk
Mix together dry ingredients. Cut butter into dry ingredients until well chopped. Beat the egg with a fork and stir into milk. Add egg/milk mixture to dry ingredients. Mix together thoroughly until dough is formed. Put on floured board and knead until blended. Flatten out until smooth and cut with cookie/biscuit cutter. Place on oiled or buttered cookie sheet and bake at 450 degrees for 10 -12 minutes. Depending on the size of your biscuit cutter, the recipe makes about 12 biscuits.
A few notes about this recipe: The original recipe called for much more salt and I’ve cut it back for health reasons and also because I thought the biscuits tasted too salty. You’re welcome to up the amount of salt if you choose.  Don’t make the mistake of flattening out the dough too much (as my niece and I did the first time we made them together.) The dough should be at least a 1/2 inch or more thick. That’s the secret to the ‘Cloud’ part of the biscuit. They rise beautifully that way.
My oven seems to take a minute or two longer than the 10 minutes called for in the original recipe so I’ve changed it to 10-12 minutes.

    Claudia, I am in complete agreement with you about this winter and the sweets. I want coffe and sweet stuff all the time. Posting a recipe does come with responsibility I think but your biscuits look divine. It is raining here but we had snow on the ground for an entire week and I cannot ever remember that happening in the past forty years. Stay warm and hope for sun! ♥O

    RIGHT NOW WE ARE HAVING JUST PLAIN OLD RAIN, BUT WE DID HAVE THE SNOW AND ICE. THE GRANDKIDS HAD A 2 HOUR DELAY THIS MORNING, THEY WERE HAPPY. SPRING COULDN’T COME FAST ENOUGH. YOUR BISCUITS LOOK YUMMY, A LITTLE MARMALADE, AND SOOOO DELICIOUS.

    Oh Claudia, these biscuits look so good!.. and Ghirardelli Hot Chocolate?.. Sounds like I may have to try that!! I had to smile at the concern for sweets in the house! I could easily see myself in an absolute state of panic if I ever found myself without at least SOME form of chocolate in my house!.. As for the weather, we’re getting much of the same, and the kids all have a snow day around here; so I find myself with all kinds of time to escape to Blogland today! Hooray!!! I’m enjoying every minute of the peace and quiet I find today, because I know it will fly by quickly.. much like the best of times always do!     uhhmmm, the chocolate,with marschmallow looks so delicate, and yummy-I would love to try that.
    And as for the cookies ,I think I could try making them,too– only thing is that I have far too little time left, spending in my kitschen.

    My first instinct, I think would be “is there enough peanut butter”? I am a total pushover for anything to do with it. In fact I would put it on your lovely biscuits in a second even though they definitely do not look or sound like they need anything! Stay warm and keep drinking that hot chocolate! Ann

    I’m sorry you’re trapped. I wish you could be here with us today becuse the rain finally went bye-bye, and the sun came out. Getting ready to make a grocery store run since I’m out of every single thing. I’m down to chocolate covered popcorn.

    Don sounds like my kind of guy – I wouldn’t want to be stuck anywhere without the appropriate amount of cookies or candy on hand. The added bonus is if the power goes out, cookies and candy won’t go bad. :-)

    I’ve been drinking a lot of hot chocolate this winter, too. With marshmallows;) I have canisters of both on my counter. We all love it!

    To make them a Red Lobster knock-off, you can add alittle shredded cheddar and garlic powder too. Yum.

    When we lived in Central NY State, we would always go for a walk after supper no matter what the weather and then loved to make hot cocoa when we got home with frozen chins-ha! I will definitely be looking for that special Chocolate!! I am addicted to chocolate-period!

    I am so sorry you have to go through another storm! The east coast has really had a bad time of it this season! WE have had just rain all day here in Ohio…going to get colder though and turn to a little snow but nothing that bad. YOur bisquits look so GOOD! That and a cup of Ghiradelli cocoa would be like heaven! It’s nice when you are snowed in to have some sweets…your husband has the right idea to winter storm survival! lol~Hugs, Patti

    OMG I just about cracked up to read that Don’s first worry was if there were enough sweet provisions if you were snowed in…I thought the two of you were just the cutest before…now I am totally convinced of it. A man after a girl’s heart for sure. Especially with the “is it too early for cupcakes?!” Loved it.
    O.K….I have duly noted the day that you shared a recipe. They sure look yummy…and I am thinking a pure Paula Dean thought…”is there butter close by to smother these with?”

    I’m with you, Claudia… sick, sick, sick of winter. Did you ever say why you and Don left the sunny west coast for blizzard-ville?

    The cloud biscuits look yummy. I should make biscuits more often. Hubby loves them. He grew up on biscuits and gravy.

    I just finished sprinkling some de-icer on our walkway, which was a sheer glaze of ice. Come on, spring!!… Donna
