My husband likes to cook.
Thank goodness, sez I, because I don’t. (I love to bake, but that’s another story.)
I’m a vegetarian, as you know, and Don is an almost-vegetarian. Lately, however, he’s been creating vegan meals that, I have to say, are delicious. Lip-smacking good.
So, the other day, I stopped at Trader Joe’s on the way home from the Apple Store. Knowing Don likes fruit on his cereal, I bought some blueberries. But he came up with a better idea.
Vegan Blueberry Pancakes.
Oh my. I am unable to find the words to tell you how yummy these were! Best pancakes ever. Moist, fluffy, wonderful.
Here he is bringing them to me on a tray. What a guy!
And here they are:
Melt in your mouth good.
Don put the recipe together after reading several suggestions online. It’s pretty basic. He ended up doubling the amounts because we like big pancakes.
Uncle Don’s Vegan Blueberry Pancakes
1 cup of flour
1 tablespoon sugar
2 tablespoons baking powder
1/8 teaspoon salt
1 cup soy milk
2 tablespoons vegetable oil
lots of blueberries
Mix it all together, make sure your skillet is hot before you add the batter, and wait for those bubbles before you flip the pancake.
We use Earth Balance Natural Buttery Spread instead of butter. It’s vegan.
If you’re making a batch for more than one person, I recommend doubling the recipe.
And he came up with a great dinner idea, too!
Both Meredith and I married guys that love to cook. We’re smart that way.
Happy Sunday.
“Go Don”. Those look amazing. Now I want some. I think you have the winning combination…one that cooks and one that bakes. Purrrrrrrfect!
It is perfect, Deb!
I’ll be right over…!
We’ll just have to make some more, Sylvia!
3 cheers for vegan!!!! hip hip hooray. A vegan cooking tip applesauce will replace the oil if you want with no bad effects on the taste. Saves lots of calories. Don, please save me a plate. Cindy
Thanks, Cindy!
Hi Claudia,
Thanks so much for visiting my blog and commenting and commiserating with me.
Oh yum! I want some! You lucky – David cooks for me but nothing like that, what a treat. I think Dame Scout needs to give Don a Knighthood or something for exemplary care of his fine Lady …
Happy Sunday!
She adores him, so she will probably be happy to!
There are so many reasons why I married my guy, but the fact that he could not just cook but loved to cook (and still does) was a helpful and decisive factor. I knew I’d never starve to death and if we had children (we had many!), they would be well fed. Tomorrow, we celebrate 30 years of marriage and he has kept us healthy and happy with his creations!
Thanks for sharing Don’s recipe. May have to try it out!
Happy Sunday!
Happy Anniversary tomorrow, Chy!
Claudia, You and your sister are smart girls. :) I wish I had married a man that loves cleaning. LOL . With those tasty looking pancakes who needs syrup. They looked that good. If I ever had pancakes they would have to be crispy. Hope Don and you have a wonderful day together. xoxo,Susie
Well, Don doesn’t love cleaning at all!
Lucky you, I don’t think my hubby even knows where the kitchen is. LOL Looks delish Don.
But Don can’t build and fix things…so it’s even!
um..making my mouth water..Have you ever tried beer in your batter..?? Talk about light and fluffy!!
We don’t drink alcohol, Missy…so no beer in the batter!
Lucky you! I don’t cook much anymore but love some pancakes! These look wonderful. Tiger loves some pancakes so maybe next time we have a spend the night I can make some! You and Don make the perfect pair for sure.
hugs,
Linda
I can still taste them, Linda!
Thanks for sharing Don’s recipe; I’ll be making them this morning.
Hope you liked them, Linda!
Those look soooooo good! Now I’m hungry…does Don deliver? ;)
Alas, he doesn’t!
YUM!! I think Don just helped me decide what to have for breakfast :)
I’ve already asked for them again – next weekend.
Yum they look so delicious – and I love the grin on Don’s face! Bob does not cook or bake but perhaps I could teach him how to make these!
I’m baking a standby today, ‘Old-Fashioned Blueberry Muffins’. The blues are looking so good now – and huge box for $4.99 at Costco spurred me to get the muffin tins out and heat up the kitchen. . . . . . . .as it’s only 92 and humid right now!
Enjoy the day – hope you are on the road to recovery Claudia.
Hugs – Mary
Love blueberry muffins, Mary. I bet they are delicious!
Having kids who are vegan, I have come to appreciate many of the recipes that they make when we go there or they bring something here. The use of cashews (pulverized) amazes me when they use them in soups, etc. It truly is healthier eating. The pancakes look amazing.
Hope you are having a great day!!
And I love cashews! I’ll have to tell Don about that, Chris.
Good Morning Claudia,
The Vegan Blueberry pancakes look delicious… will have to try them for sure….
I have heard you speak so often about your love for Peet’s coffee and I found it last week in my Publix grocery store and it was on sale; looking forward to trying that also…
I finally got to visit a Trader Joe’s that I hear you and others talk about so often, when they opened one in Winter Park (Orlando area) June 26th. Loved it!
Hope you and Don have a great day!!! Thanks for sharing the recipe…..
Debbi
Isn’t Trader Joe’s wonderful, Debbi? So glad you got there!
What a guy! They look so amazing! Thank you for the recipe. I know what we are having for dinner!
Enjoy, Melanie!
I adore my husband, but he is not a cook. I will give this recipe a try because the pancakes look scrumptious! You are a lucky girl!!
Big Texas Hugs,
Susan and Bentley
I am, Susan! Lots of good meals. Although it isn’t too much fun when I’m out of town or vice versa!
I hope he makes me a batch when I come up to visit next, my mouth is watering already.
Meredith
They are really good, Mer!
Don’s delicious vegan blueberry pancakes are pretty, too, but that won’t stop any of us from devouring them, I’m sure! My husband also likes to cook – Cretan delicacies are his forte, using fabulous, fresh fare, straight from our garden. Enjoy, and thanks for sharing!
xo
Poppy
I bet your husband’s meals are delicious, Poppy!
Yum..you girls are smart indeed…Don..could some of us ladies have you cloned??..must go eat now..lol..
No cloning, Nancy! I’m not willing to share!
Oh darn..I just knew you wouldn’t agree to it Claudia..I guess I have to make my own pancakes..lol..
Claudia, here is just one recipe,,,, lots more out there. http://vegansparkles.com/2012/06/20/cashew-cream-of-mushroom-soup/
Read through all of the comments on that post, as there are some good comments and tips about using cashews in soups. I know when my kids got Vitamix blenders it made it easier, but if you soak the cashews long enough they can go through the regular blender just fine!!
Those look delicious! For some reason, I’ve never had much success with making pancakes, but I may have to give these a try. And that’s one adorable husband you’ve got there Claudia!
Nothing is sweeter than having your hubby make breakfast for you, especially pancakes. They look yummy! I love blueberries so I’ll have to try this easy recipe.
Yum!
Well these sure sound good, although right at the moment I can’t imagine how one could make tasty pancakes without eggs. Apparently… it can be done! I will be trying these as soon as I have all ingredients. And pinning that photo because even if they tasted like wallpaper paste, they LOOK gorgeous! Enjoy your Sunday evening… :>)
Claudia & Don, if I could, I would send you some of the last blueberries on my bush to use for another batch of your pancakes. I can’t wait to make some monday morning!!!!! Thank you for sharing the how-to with all of us.
Now you just need a side of bacon to go with those pancakes! Ha ha, just kidding. These look delicious. I love to cook but only if I’m in the mood. Unfortunately, my husband doesn’t cook at all – though he grills.
