Uncle Don’s Vegan Blueberry Pancakes

My husband likes to cook.

Thank goodness, sez I, because I don’t. (I love to bake, but that’s another story.)

I’m a vegetarian, as you know, and Don is an almost-vegetarian. Lately, however, he’s been creating vegan meals that, I have to say, are delicious. Lip-smacking good.

So, the other day, I stopped at Trader Joe’s on the way home from the Apple Store. Knowing Don likes fruit on his cereal, I bought some blueberries. But he came up with a better idea.

Vegan Blueberry Pancakes.

Oh my. I am unable to find the words to tell you how yummy these were! Best pancakes ever. Moist, fluffy, wonderful.

Here he is bringing them to me on a tray. What a guy!

Melt in your mouth good.

Don put the recipe together after reading several suggestions online. It’s pretty basic. He ended up doubling the amounts because we like big pancakes.

Uncle Don’s Vegan Blueberry Pancakes

1 cup of flour
1 tablespoon sugar
2 tablespoons baking powder
1/8 teaspoon salt
1 cup soy milk
2 tablespoons vegetable oil
lots of blueberries

Mix it all together, make sure your skillet is hot before you add the batter, and wait for those bubbles before you flip the pancake.

We use Earth Balance Natural Buttery Spread instead of butter. It’s vegan.

If you’re making a batch for more than one person, I recommend doubling the recipe.

And he came up with a great dinner idea, too!

Both Meredith and I married guys that love to cook. We’re smart that way.

    3 cheers for vegan!!!! hip hip hooray. A vegan cooking tip applesauce will replace the oil if you want with no bad effects on the taste. Saves lots of calories. Don, please save me a plate. Cindy

    There are so many reasons why I married my guy, but the fact that he could not just cook but loved to cook (and still does) was a helpful and decisive factor. I knew I’d never starve to death and if we had children (we had many!), they would be well fed. Tomorrow, we celebrate 30 years of marriage and he has kept us healthy and happy with his creations!

    Yum they look so delicious – and I love the grin on Don’s face! Bob does not cook or bake but perhaps I could teach him how to make these!

    I’m baking a standby today, ‘Old-Fashioned Blueberry Muffins’. The blues are looking so good now – and huge box for $4.99 at Costco spurred me to get the muffin tins out and heat up the kitchen. . . . . . . .as it’s only 92 and humid right now!

    Having kids who are vegan, I have come to appreciate many of the recipes that they make when we go there or they bring something here. The use of cashews (pulverized) amazes me when they use them in soups, etc. It truly is healthier eating. The pancakes look amazing.

    I have heard you speak so often about your love for Peet’s coffee and I found it last week in my Publix grocery store and it was on sale; looking forward to trying that also…
    I finally got to visit a Trader Joe’s that I hear you and others talk about so often, when they opened one in Winter Park (Orlando area) June 26th. Loved it!

    Read through all of the comments on that post, as there are some good comments and tips about using cashews in soups. I know when my kids got Vitamix blenders it made it easier, but if you soak the cashews long enough they can go through the regular blender just fine!!

    Well these sure sound good, although right at the moment I can’t imagine how one could make tasty pancakes without eggs. Apparently… it can be done!
